Appenzeller® cheese owes its unique spicy flavour to the way it is tended with the secret herbal brine. During its three to six-month maturing period each cheese wheel is rubbed with this very special brine at regular intervals and this gives it its particularly spicy flavour. As the herbal brine makes Appenzeller® cheese a very special treat, the strictest secrecy is maintained and jealously guarded. Only two people know the recipe.
