The name Appenzeller® cheese comes from the Swiss region of Appenzell where the cheese originates. This precise, strictly controlled area of production encompasses the cantons of Appenzell Innerrhoden and Appenzell Ausserrhoden as well as parts of the bordering cantons of St. Gallen and Thurgau.
