Genuine from the Very Beginning
The rich herbal grass of the Appenzell region provides an optimal basis for the natural raw milk used to make Appenzeller® cheese. The milk delivered to the cheese dairies comes exclusively from cows that have been fed with hay and herbal grass. None of these cows is fed with silage. The milk is inspected for the proper quality upon its arrival at the cheese dairy. Moreover, the milk, the cows and the cow barns are all subject to continual quality controls. As a natural product, Appenzeller® cheese is made without artificial preservatives. The unique herbal brine that is used during the cheese’s production contributes to its outstanding quality. The exact composition of the herbal brine – a mixture of herbs, roots, leaves, flower petals, seeds and rinds – is a carefully guarded secret.
