During its 3 to 6 month ripening process, Appenzeller® cheese is regularly treated with a unique herbal brine. This brine seeps in through the rind and gives the cheese its uniquely zesty flavor.

 

 

The Herbs

The unique herbal brine is made according to an elaborate distillation and extraction process from a selected mixture of herbs, roots, leaves, flower petals, seeds and rinds.

The exact recipe for the herbal brine is a closely guarded secret that has been passed down from generation to generation. There are currently only two people who know the exact composition of this unique herbal mixture. They are the only ones who have access to the safe that holds the recipe.
